Breakfast

Adelle Davis ones said “Eat breakfast like a king, lunch like a prince and dinner like a pauper.” I think this suits me quite well. I love breakfast and will get up 2 hours earlier to make it. Love making it look great and feel it brings me in a great mood for the day. If I don’t have time some cut up fruit with soy yogurt will do … plus quickly topped with some seeds.

Fruit Salad

  • Cut up mixed fruit from what ever you have available.
  • Soy Yogurt

Optional toppings:
1tbsp Flax seeds
1 tsp  Chia Seeds (softened in hot water)
1 tbsp Goji Berry’s (softened in hot water)
Some crunched Nuts.

Healthy Flax Seed Pancakes
I just made this up and chucked a random amount in a blender but think it would be something like this:

  • 1 tbsp Rolled Oats
  • 1 tbsp Flax Seeds
  • 1 tsp Chia Seeds
  • 2 Eggs
  • 1 Banana
  1. Mix in a blender.
  2. Put a pan on low heat and oil up with coconut oil.
  3. Poor batter to make small size pancakes one by one. (Makes about 5)
  4. Flip pancake when small bumbles appear.

Porridge 
   Now I get a bit of a swollen belly from this but some winter days it’s just a great start. I sometimes prepare some the
night before and can heat it up in the morning.

  1. Soy Milk, heat it up in a small pan.
  2. Rolled oats, just slightly below the milk line.
    – Heat until it becomes thicker.
  3. 1 tbsp Honey stirred trough if you like it sweet.

Optional Toppings
Fruit
Flax Seed
1tsp Chia Seeds
1tsp Goji Berry

2 Ingredients Pancake
When I figured this one out  I was so excited! Healthy pancakes with only 2 ingredients! So easy, healthy and yummy. Also recon this would be great for kids.

  • 2 Eggs
  • 1 Banana


Mix with a fork.
Put pan on low heat and oil it with coconut oil.
Poor batter in pan and cover with lid so it will cook on both sides.

Overnight Oats
I just made this up last night but I’m sure you can find heaps of recipes online and make your own up.
I think I did something like this:

  • 3 tbsp Rolled Oats
  • 1 tbsp Chia Seeds
  • 2 tsp Flax Seeds
  • 1 tsp Goji Berry
  • 3 tbsp Soy Yogurt
  • 1 dash of apple juice

Few pieces of honey poached quince (This just because my mom made them the other day and I had some left. You could use any fruit really. Just add a dash of honey trough it as well cause I think it gave a nice sweetness to the oats.) 
Few Blue Berry’s
Some Cinnamon.

Chai Tea Porridge 
YUMMM APRILLL! I came up with a new way to make my porridge! I’ts winter here at the moment and I wanted something worm and filling. Yes I cant take oats that well but sometimes I just suck it up and take the belly bloat. hehe
I don’t know the right amount I used so just play with it. I did something like:

  • 1 bag of Chai Tea
  • Soy Milk
  • 1 tsp Cinnamon
  • 1 tsp Honey
  • (rolled) Oats
  • Chia seeds (you could leave it out but I mixed it trough while I cooked it)
  1. Heat up a sauce pan with Soy milk. Add 1tsp of Honey and Cinnamon.
  2. When its hot dip in the tea bag of Chai Tea and let it sit for a bit.
  3. Take out the bag of Tea and add the Oats (amount depends on how much Soy Milk you used) and the Chia Seeds.

I topped it with Blue Berry’s and Goji Berry’s and had it with a side of some fruit. Also it has been getting cold here so I made myself a mug of Ginger Tea to guard myself against the flu. Enjoy!
